
For mango lovers, this summer will indeed be a tough one, thanks to the Covid-19 pandemic. Across the country, the subsequent restrictions on the movement of goods have stalled the supply of mangoes. But amongst this, if you are fortunate enough to get hold of a few of them, try experimenting with a new recipe called sweet mango pulao.
Ingredients for Sweet Mango Pulao Recipe
- Basmati rice 2 cups
- Raw Mangoes 2 medium
- Raisins 25-30
- Almonds 20
- Cashewnuts 12
- Ghee 4 tablespoons
- Green cardamom powder 1/2 teaspoon
- Nutmeg powder 1/4 teaspoon
- Milk 1/2 cup
- Saffron (kesar) a pinch
- Sugar 1/2 cup
Sweet Mango Pulao Recipe
Method
Step 1
Wash rice twice and soak in just enough water to cover it for half an hour. Drain. Wash, peel and chop mangoes into cubes. Grind half of the mango cubes to a puree.
Step 2
Wash and pat dry raisins. Slice almonds and halve cashewnuts. Heat ghee in a deep pan and gently fry raisins. Drain and keep aside. In the same pan add rice and sauté gently for two to three minutes. Add green cardamom powder and nutmeg powder.
Step 3
Boil milk, saffron and sugar. Add to rice with two and a half cups of water. Add raisins, almonds, cashewnuts and mango pulp. Stir once. Cover and cook on low heat till done. Allow standing time of five minutes. Mix in mango cubes. Serve hot.
